Working late, messed up sleep cycles, and the pace of life in general has made us crave random things, at random hours. Sandwiches are a great way to make sure you’re full, and aren’t exactly bingeing two packets of chips to feel full. Putting together a quick sandwich can actually be quite fun too. So if you’re a midnight snacker, here are five types of sandwiches you can make.
Classic Veg & Cheese Grilled
Ingredients
Two slices of wholewheat or multigrain bread
One sliced cucumber (peeled)
One sliced tomato
Lettuce leaves
Sliced cheese
Butter (optional)
Method: Spread some butter on the slices, add the slice of cheese, followed by the vegetables, and quickly toast on the tava, or pop it into your sandwich maker. Enjoy it with some hot sauce on the side.
Leftover Chicken Sandwich
Ingredients
Two slices of wholewheat or multigrain bread
Leftover chicken pieces (2-3 pieces, or a chicken breast) shredded
One sliced capsicum
Salsa sauce
Method: Spread the salsa sauce on both slices of bread, place the chicken and capsicum, and munch. This doesn’t have to be grilled but if you like it toasted, go right ahead.
Egg & Tomato Sandwich
Ingredients
Two slices of bread of your choice (a baguette works best)
One sliced hard boiled egg
1 sliced tomato
1 tbsp mayonnaise
Salt and pepper to taste
Method: Place the eggs and tomato slices on the bread. Sprinkle salt and pepper, and spread the mayonnaise on the top slice of the bread. Eat chilled, grilled, or toasted.
Mediterranean Open Tuna Sandwich
Ingredients
Two slices of bread with big crusts
Tinned tuna
3-4 tbsp mayonnaise
1 tbsp chopped onions
1 tbsp freshly chopped basil
1 tsp fresh lemon juice
One shredded cheese cube
Salt and pepper to taste.
Method: Combine tuna, onions, basil, mayonnaise, lemon juice, and cheese in a bowl. Spread over two slices of crusty bread, and sprinkle salt and pepper.
Guacamole sandwich
Ingredients:
Two big teaspoons of guacamole (you can order some online and store)
Chopped onions for additional crunch
Two slices of bread
Two tsps butter
Method: Spread the butter on the bread, and lightly toast. Spread guacamole mixed with chopped onions, and close the sandwich. Consume fresh.
